How to make cantaloupe & peach conserve:
A highly unusual conserve. This tastes very good on buttered scones with clotted cream on top. See Cooking with Sugar for information on the tricky process of boiling sugar.


3 cups granulated sugar
2 cups fresh peach diced
2 cups cantaloupe melon diced
juice and finely shredded zest 2 lemons
(see measure conversions for more information)


- Combine all the ingredients in a saucepan.
- Bring to the boil.
- Stir until the sugar is dissolved.
- Cook rapidly until the mixture thickens.
- Remove from heat and allow to cool a little.
- Pour into clean jars and seal.
