How to make candied ginger:
These candies are very similar to the candied fruits that were traditionally available at Christmas. They were meant to be eaten as sweets or possibly as a dessert at the end of the meal. Candied fruit can also be used as decoration for cakes and trifles. See Cooking with Sugar for information on the tricky process of boiling sugar.



Ingredients

2 cups sugar
6 fluid oz water
4 tablespoons root ginger, grated
(see measure conversions for more information)

Method

- Line a large tin with greased baking parchment.
- Boil the sugar and water in a heavy based saucepan until the sugar begins to candy around the edges
- Stir in the grated ginger.
- Pour out immediately on to the paper and leave to cool, then cut into different shapes.

Problems with black currant jelly


Hello everybody,
I made some black currant jelly recently using two pans. One pan produced excellent results, 8lb of nice firm jelly. The other pan's contents, of around 7lb, have not set. Both pans were treated identically. I have looked through my collection of cookery books and found no help, does anyone know of any way of rescuing this jelly as it goes against the grain to ditch it?
