Dessert Recipes > Canary Pudding

How to make canary pudding:
This is a famous traditional pudding in England. Possibly it gets its name from the yellow colour that the lemon gives to the pudding.

Ingredients

1 cup plain flour
2 large eggs
6 tablespoons butter
3 tablespoons caster/superfine sugar
1/2 teaspoon baking powder
grated lemon rind
juice of one fresh lemon
(see measure conversions for more information)

Method

- Cream the butter and sugar together until pale in colour and fluffy in texture.
- Add the eggs one at a time, beating them in with 1 dessertspoon of the flour.
- Sift the remaining flour with the baking powder and add the grated lemon rind.
- Fold the flour mixture into the creamed butter and sugar and add sufficient lemon juice to form a mixture of dropping consistency.
- If necessary add a little water as well.
- Grease a pudding basin and pour the pudding mixture in.
- Cover with a piece of buttered greaseproof paper and steam for 1 - 1 1/4 hours.
- Serve with a lemon sauce.

Last year I overcrowded my small veg plot with counter-productive results like mildew and snail infestation that went unnoticed until we came to pick the tomatoes (all holes!). I wonder if anyone has ever been totally self providing or whether the local market and barter played...
