6 Ratafia biscuits
4 egg yolks
the whites of 2 eggs
1 1/2 tablespoons caster/superfine sugar
1 pint milk
2 tablespoons glace cherries
almond essence
(see measure conversions for more information)
- Put the milk into a saucepan and bring to the boil.
- Pour the milk over the egg mixture, stirring all the time.
- To this add the sponge cake, Ratafia biscuits, sugar and almond essence.
- Mix well.
- Butter a heatproof basin and pour the mixture into it.
- Cover with a piece of buttered greaseproof paper and steam for 1 - 1 1/4 hours. Do not allow the water to boil over into the pudding.
- Turn out onto a warmed serving plate and serve with a jelly sauce.

How to make cabinet pudding:
An absolutely classic English pudding. It is quite a complicated recipe and this pudding could be used at a dinner party.

4 cups roughly broken up trifle sponge cake6 Ratafia biscuits

Method
