1/4 pint evaporated milk
1/4 pint milk
4 tablespoons butter
3 tablespoons water
few drops of butterscotch essence
(see measure conversions for more information)
- Remove from the heat, add the essence and beat well until the mixture thickens.
- Pour into a suitable buttered tin and leave to set before cutting into squares.

How to make butterscotch fudge:
A smooth creamy fudge flavored with butterscotch. The essence can be substitued with vanilla extract. See Cooking with Sugar for information on the tricky process of boiling sugar.
Ingredients
2 cups caster/superfine sugar1/4 pint evaporated milk
1/4 pint milk
4 tablespoons butter
3 tablespoons water
few drops of butterscotch essence

Method
- Place all the ingredients in a heavy based saucepan and boil to 115oC/240oF or until a drop will just set when dropped into cold water.- Remove from the heat, add the essence and beat well until the mixture thickens.
- Pour into a suitable buttered tin and leave to set before cutting into squares.
