How to make butterscotch crisps:
A thin buttery biscuit. Crisp, delicious and each one topped with a cherry.


8oz butter
4oz light brown sugar
1 egg
1/2 level tsp bicarbonate of soda
8oz plain/all purpose flour, sieved
1/2 level tsp cream of tartar
1tsp vanilla essence
glace cherries
(see measure conversions for more information)


- Melt the butter and pour over the sugar in a basin stirring well.
- Add the egg, vanilla and flour.
- Add the bicarbonate and cream of tartar.
- Mix to a smooth dough.
- Leave to harden for at least 1 hour.
- Form into walnut sized balls.
- Place on greased baking trays.
- Make sure each crisp has room to spread on the baking tray.
- Top each with a small piece of glace cherry.
- Bake at 180 degrees C. for about 10 minutess or until they are golden brown.
- Leave the crisps to cool on the trays and then put on a wire rack.
