How to make butterscotch:
Butterscotch is a lovely, creamy brittle toffee that is traditionally linked with Scotland. If you like the taste of butterscotch try butterscotch brownies and butterscotch parfait. See Cooking with Sugar for information on the tricky process of boiling sugar.


just over half cup brown sugar
1/2 pint water
vanilla essence
1 teaspoon vinegar
1 tablespoon butter
(see measure conversions for more information)


- Put all the ingredients except the vanilla essence into a heavy pan.
- Boil for 20 minutes.
- Remove from the heat.
- Add the vanilla essence and pour into a greased tin.
- Allow to cool.
- Cut into divisions when semi-set.
