Butter Bean Soup Recipe

Butter bean soup is an easy, filling winter soup which can be made from store cupboard ingredients.


  • 1/2 cup butter beans
  • 1 medium sized onion
  • 2 tablespoons olive oil
  • 1 heaped tablespoon plain/all purpose flour
  • 2 pints of vegetable stock
  • salt and black pepper
(see measure conversions for more information on quantites)


  1. Soak the beans overnight in cold water if bought dried.
  2. Drain the beans and put them into a saucepan.
  3. Add the stock.
  4. Boil very gently until they are tender (approx. 1 hour).
  5. Peel and chop the onion, and fry in oil until golden brown.
  6. Sprinkle in the flour, stirring all the time.
  7. Heat for a further 2 - 3 minutes, still stirring.
  8. Rub the beans through a sieve or blend in a blender.
  9. Add the beans to the flour mixture.
  10. Stir while the stock is mixed in gradually.
  11. Season if required.
  12. Bring to the boil and serve.

Prep Time: 480 minutes

Cook Time: 75 minutes

Yield: 2-4 portions


I can't find any recipes for Butterbean & Orange Soup. As a result of which, I'm developing my own recipe for it. NO ONION ! -
and NO Garlic or flour, but I am adding black pepper, sea salt, and a pinch of sugar.
