1 medium sized onion
2 tablespoons olive oil
1 heaped tablespoon all purpose flour
2 pints of vegetable stock
salt and black pepper
(see measure conversions for more information)
- Drain the beans and put them into a saucepan.
- Add the stock.
- Boil very gently until they are tender (approx. 1 hour).
- Peel and chop the onion, and fry in oil until golden brown.
- Sprinkle in the flour, stirring all the time.
- Heat for a further 2 - 3 minutes, still stirring.
- Rub the beans through a sieve or blend in a blender.
- Add the beans to the flour mixture.
- Stir while the stock is mixed in gradually.
- Season if required.
- Bring to the boil and serve.
