Bruges Soup Recipe

A Belgian regional vegetable soup that comes from the beautiful city of Bruges.

Ingredients

  • 1 celery heart
  • 2 pints vegetable stock
  • 2 tablespoons sago
  • 1 egg yolk
  • 1/4 pint of milk
  • 6 drops of tarragon vinegar
  • salt and black pepper

Method

  1. Cut the celery into small cubes.
  2. Put it with the stock into a saucepan.
  3. Simmer for 10 minutes.
  4. Add the sago and boil gently for a further 15 minutes.
  5. Cool a little.
  6. Beat the egg yolk and mix the milk.
  7. Stir this in and raise temperature again.
  8. Add seasoning if required.
  9. Drop in the vinegar and serve.

Prep Time: 10 minutes

Cook Time: 35 minutes

Yield: 2-3 portions
