2 pints vegetable stock
2 tablespoons sago
1 egg yolk
1/4 pint of milk
6 drops of tarragon vinegar
salt and black pepper
(see measure conversions for more information)
- Put it with the stock into a saucepan.
- Simmer for 10 minutes.
- Add the sago and boil gently for a further 15 minutes.
- Cool a little.
- Beat the egg yolk and mix the milk.
- Stir this in and raise temperature again.
- Add seasoning if required.
- Drop in the vinegar and serve.

A Belgian regional soup. Well worth trying.Ingredients
