1 tablespoon yeast
2 tablespoons sugar
2 tablespoons candied peel, finely chopped
4 cups plain flour
2 eggs
1/2 cup currants
1/4 pint milk (warmed to blood heat)
(see measure conversions for more information)
- Add the yeast and the beaten eggs.
- Fold in the currants and peel.
- Add enough warm milk to make a dough.
- Knead.
- Stand in a warm place to rise for about 30 minutes.
- Make into as many buns as required, brush with milk and bake in a hot oven for 20 minutes.

How to make breakfast buns:
Very similar to Hot Cross buns and are excellent for breakfast or indeed for a snack at another time during the day. If you fancy trying these for breakfast serve them with good butter, your favorite jelly and a good quality piping hot coffee.
Ingredients
3 tablespoons lard1 tablespoon yeast
2 tablespoons sugar
