How to make brandy wafers:
Similar to a brandy snaps, these make a great snack to have with coffee.


4oz butter
1/2lb treacle
5oz plain/all purpose flour
1/4oz ground ginger
6oz sugar
(see measure conversions for more information)


- Preheat oven 180oC.
- Melt the butter and treacle together.
- Stir in the sieved flour, ginger and sugar.
- Mix well.
- Drop teaspoonfuls of the mixture onto a well-greased baking tray.
- Space the spoonfuls out well.
- Bake in a moderate oven for about 10 minutes.
- Remove from the oven and leave to cool for a minute.
- Lift gently from the tin and curl each wafer over.
