How to make braised oxtail:
An incredibly tasty and satisfying main meal. The oxtail makes such a rich gravy that there is no need to add stock cubes.


about 8 pieces of oxtail
1 cup of diced onion
3 tablespoons butter
1 tablespoons vinegar
2 large carrots diced
1 cup diced celery
1 green pepper diced
4 medium potatoes peeled and halved
(see measure conversions for more information)


- Put the flour onto a plate and add salt and pepper.
- Roll the oxtail joints in the flour.
- Melt the butter.
- Fry the joints until browned all over.
- Add the vinegar and some water.
- Bring to the boil, stirring all the time.
- Reduce to a simmer.
- Cover and simmer for 2 1/2 to 3 hours.
- Add the vegetables.
- Bring back to the boil.
- Simmer until the vegetables are cooked.
