6 medium carrots, peeled and chopped
1 small swede, peeled and chopped
1 large onion, peeled and chopped
4 tablespoons red wine
1 tablespoon flour
1 tablespoon oil
1 tablespoon tomato puree
1/2 teaspoon dried mixed herbs
1/4 pint beef stock
salt
black pepper
(see measure conversions for more information)
- Roll the joint of meat in the seasoned flour.
- Heat the oil in a large pan and brown the joint all over.
- Put the meat into a large lidded casserole.
- Put the vegetables into the fat and juices left in the frying pan.
- Cook for a few minutes and then add all the other ingredients.
- Bring to the boil.
- Put the vegetables and juices into the casserole with the meat.
- Put the lid on and cook at 170 degrees Centigrade (see temperature conversions) for 2 1/2 hours or until the meat is tender.
- Do not allow to dry out during cooking.
- Add more liquid if necessary.
