How to make Boston toasts:
This is a classy twist on the more traditional scrambled eggs on toast.


3 eggs
half glass port
chillies (to taste)
3 tablespoons butter
2 tablespoons grated cheese
pepper and salt
bread for toast
(see measure conversions for more information)


- Melt the butter in a heavy saucepan and add the egg yolks.
- Stir over a gentle heat until the mixture thickness.
- Add the port, salt, pepper and cheese.
- Heat through but do not allow to boil.
- Pour onto hot, buttered toast and garnish with strips of chilli.
