a good chunk of fat bacon
just under 3/4 cup brown sugar
1/2 teaspoon mustard
salt
1 tablespoon black treacle
(see measure conversions for more information)
- Drain the beans and cover with fresh water.
- Simmer until the skins are soft.
- Cut a slice from the bacon and place it in the bottom of an oven-proof dish.
- Remove the rind from the rest of the bacon and cut the meat into cubes.
- Mix the beans, bacon cubes, sugar, treacle, mustard and salt together.
- Put this mixture on top of the slice of bacon in the oven-proof dish.
- Put the bacon rind on top.
- Cover with boiling water and cook in a very slow oven for 8 hours.

How to make Boston baked beans:
Baked Beans are often attributed to the cowboys who could carry the ingredients with them and rustle up a plate of beans over the campfire. They certainly beat the tinned variety.
Ingredients
2 cups small haricot beansa good chunk of fat bacon
just under 3/4 cup brown sugar

Method
- Soak the beans for 12 hours in enough cold water to cover them.- Drain the beans and cover with fresh water.
- Simmer until the skins are soft.

- Mix the beans, bacon cubes, sugar, treacle, mustard and salt together.
