8oz soft brown sugar
8oz golden syrup/light corn syrup
walnut halves
(see measure conversions for more information)
- Add the sugar and syrup and heat gently until the sugar is dissolved.
- Stir occasionally.
- Increase the heat and boil the mixture rapidly for about 10 minutes.
- The temperature should read 155oC/310oF on a sugar thermometer.
- Remove from the heat.
- Pour the toffee into a well greased shallow tin.
- Leave to cool for 10-15 minutes.
- Mark into squares and put a walnut half in the middle of each.
- Leave until completely cold, and then remove the squares of toffee.
- Store in an airtight container.

THis is a great website but with only one downside; I think there should be photographs of the finished food so that you know when or if you went wrong.
