Dessert - Blackberry Pudding with Clotted Cream
1 1/4 cups cider
1 cup granulated sugar
5 slices of white bread
(see measure conversions for more information)
- Take the crusts from the bread and use some of the bread to line a pudding basin.
- Fill the bread-lined basin with the cooled fruit mixture and cover with the remaining bread.
- Put a plate and a weight on top and leave in a cold place for 24 hours.
- Turn out and serve with delicious Cornish clotted cream. Yummy!

How to make blackberry pudding:
When out for a walk in the country why not pick some blackberries and make this delicious blackberry pudding.
Ingredients
3 cups blackberries1 1/4 cups cider
1 cup granulated sugar
5 slices of white bread
(see measure conversions for more information)
Method
- Simmer the blackberries with the cider and sugar.- Take the crusts from the bread and use some of the bread to line a pudding basin.
- Fill the bread-lined basin with the cooled fruit mixture and cover with the remaining bread.
- Put a plate and a weight on top and leave in a cold place for 24 hours.
- Turn out and serve with delicious Cornish clotted cream. Yummy!
