6oz caster/superfine sugar
2 tablespoons golden syrup
4 large eggs
a few drops almond essence
10oz plain/all purpose flour
1/2 teaspoon baking powder
pinch salt
2oz crystallized ginger chopped
2oz ground almonds
2oz walnuts chopped
glace and crystallized fruit all chopped small
4oz pineapple
4oz apricots
4oz pears
4oz peaches
2oz cherries
2oz angelica
(see measure conversions for more information)
- Cream butter and sugar.
- Beat in eggs one at a time.
- Add syrup and almond essence.
- Sift flour, baking powder and salt together and fold into mixture.
- Fold in the prepared fruit and nuts.
- Pour into a well greased and floured eight inch tin.
- Make a depression in the centre of the cake.
- Bake at 170 degrees C. for 2 1/2 hours.
- Cake is cooked when a metal skewer or thin knife blade come out clean.
- Leave to cool in the tin for a couple of hours then put on wire rack.

How to make birthday cake:
All types of cakes are now served at birthday parties but this type of fruit cake is generally considered to be the traditional Birthday Cake. It can be iced and decorated with the words "Happy Birthday" along with the name of the recipient and possibly their age, depending on how old they are!
Ingredients
