How to make beet relish:
A sweet and sour relish to try.


2lb cooked beetroot, sliced and diced
1lb white cabbage, finely shredded
3 tablespoons fresh horseradish, grated
1 tablespoon mustard powder
1 pint malt vinegar
8oz sugar
pinch of cayenne pepper

- Combine all the ingredients in a large saucepan.
- Bring slowly to the boil, and then simmer for 30 minutes, stirring occasionally.
- Spoon into sterilised, preheated jars and cover at once as for jam.
