How to make bean cutlets:
These cutlets really do make a good vegetarian meal. They are so much nicer than any of the commercial meat substitutes available.


1 cup tinned butter beans or haricot beans or use dried beans prepared according to packet
3 tablespoons butter
1 heaped tablespoon flour
1 1/2 teaspoons curry powder or to taste
1/4 pint vegetable stock
black pepper
1 small clove of garlic
1/2 cup breadcrumbs
1 egg

- Mash the beans.
- Fry the flour and curry powder in the butter for 2 minutes stirring all the time.
- Add the stock, stir and boil.
- Add the mashed beans, remove from heat and allow to cool.
- Season to taste with crushed garlic, salt and pepper.
- Turn onto a floured board and shape into about twelve cutlets.
- Place on a greased baking tray and brush with a little beaten egg.
- Bake for 15 minutes at 200 degrees centigrade (see temperature conversions).
