How to make banana chutney:
A sweet yet spicy chutney with the unusual addition of banana.


8 large bananas peeled and sliced
1lb cooking apples peeled, cored and finely chopped
1/4 lb raisins
1/4 lb onions, peeled and finelychopped
6oz demerara sugar
1 level teaspoonn salt
1 dessertspoon ground ginger
1/2 small teaspoon cayenne pepper
1/2 pint white vinegar

- Put all the ingredients into a heavy saucepan.
- Simmer gently.
- Stir occasionally.
- Cook for about 30 minutes.
- Allow to cool.
- Bottle.
