How to bake Red Mullet:
With the demise and shortage of cod people are now trying the more unusual varieties of fish which are becoming more readily available in supermarkets. Unfortunately because of supermarkets the smaller fish mongers have all but disappeared along with their specialist knowledge and correct handling and storage of fish. Red mullet is an acquired taste but is well worth trying.
Ingredients
a fresh red mulletsalt
pepper
chopped parsley
(see measure conversions for more information)
Method
- Wipe the fish and cut them crosswise a few times down each side.- Season with pepper, salt and finely chopped parsley.
- Place in foil very loosely wrapped in a baking dish.
- Cook for about 25 minutes at gas mark 5 (see temperature conversions).
- Serve with Maître D'hotel butter.
