How to make baked chicken stuffed with courgette and pepper:






Ingredients

Baked Chicken Stuffed With Courgette and Pepper
4 x legs and thigh of chicken
2oz butter
1 onion, peeled and finely chopped
half a red pepper, finely chopped
half a green pepper, finely chopped
2 courgettes grated
4oz white breadcrumbs
1 egg
2 tablespoons grated parmesan cheese
salt and pepper

for coating:

1oz butter
1/2 teaspoon dry mustard
1 teaspoon French mustard
1 teaspoon oil

for sauce:

3 large tomatoes finely chopped
1oz butter
1 teaspoon tomato puree
1/8 pint double cream

Method

- Put onions and peppers into a pan with 2oz butter.
- Cook until the vegetables are just sift.
- Add the courgettes.
- Cook until softened (1-2 minutes).
