2 teaspoons mustard
freshly ground black pepper
3 medium potatoes, peeled and sliced
1 medium onion, peeled and thinly sliced
1 teaspoon finely chopped fresh sage or savory or parsley
1 large baking apple, peeled and sliced
2/3 of a cup dry cider
boiling water
(see measure conversions for more information)
- Season with pepper and roll up.
- Lightly oil an ovenproof dish and cover the bottom with half the sliced potatoes.
- Scatter over the onion slices and season with the pepper and herbs.
- Cover the potatoes and onions with the apple slices and place the mackerel rolls on top.
- Arrange the remaining potatoes over the fish and season with more pepper.
- Add the cider and enough boiling water to half fill the dish.
- Cover with foil and bake in oven at 180 degrees centigrade (see temperature conversions) for 45mins.
- Remove the foil and continue baking for 30 minutes or until the potatoes are golden brown.

How to make baked apple and mackerel:
A nice mackerel dish to try which uses apple as a sharp fruit to offset the oiliness of the fish.
Ingredients
4 fresh Mackerel Fillets2 teaspoons mustard
