How to make bacon turnovers:
During the war an adult's weekly rations allowed 4oz of bacon. This recipe is typical of the frugal way that small amounts of meat were stretched to feed a family. Serves 4.



Ingredients

1lb shortcrust pastry

for filling:

4oz back bacon, grilled and chopped
2 cooked leeks, chopped finely
8oz cooked potatoes, diced
2 tablespoons finely chopped parsley
(see measure conversions for more information)

Method

- Roll out the pastry on a lightly floured surface.
- Cut into four large rounds.
- Mix the bacon with the vegetables.
- Season well.
- Put some of the bacon mixture in the middle of each pastry round.
- Moisten the edges of the pastry and seal together.
- Bake at about 200 degrees C. for about 25 minutes.
- Serve hot or cold.

We are having ham to please my DH and Cornish game hens (very small chickens) to please the kids.

I will make mashed potatos with cheese, butter, milk, salt, pepper, and garlic.
