How to make bacon steaks & cucumber sauce:
A very unusual creamy sauce which offsets the saltiness of the meat.


four bacon steaks (approx. 4oz each)

for the sauce:
1 cucumber, peeled and sliced
1 level tablespoon butter
1 heaped tablespoon plain flour
half pint milk
3 tablespoons double cream
pinch cayenne pepper
salted water
chopped chives
(see measure conversions for more information)


- Brush the bacon steaks with the oil.
- Grill or bake them until nicely cooked.
- Boil the cucumber in salted water for 3 minutes.
- Drain and dry the cucumber on kitchen paper.
- Make a white sauce from the flour, butter and milk.
- Stir in the cream and cucumber and chives.
- Season to taste.
- Serve bacon with sauce.
