How to make bacon and lentil soup:
A hearty, warming soup made from lentils and bacon. It is ideal as an appetiser in small portions or if you prefer serve it at lunch with plenty of hot, crusty bread.





Ingredients

Lentil Bacon Soup
2 tablespoons butter
3 leeks washed and chopped
2 sticks celery washed and chopped
2 rashers back bacon finely chopped
8oz red lentils
2 1/2 pints water
2 chicken stock cubes
salt and pepper
cream for swirling

Method

- Melt the butter in a large pan.
- Add the celery, leeks and bacon.
- Cover and cook over a low heat for about 10 minutes.
- Add the lentils and the water.
- Add the stock cubes.
- Bring to the boil.
- Reduce heat.
- Cover and simmer for 30 minutes.
- Cool a little.
- Blend in blender.
- Reheat and serve.
