Starter - Bacon and Lentil Soup
Main Course - Baked Chicken Stuffed With Courgette And Pepper
Dessert - Lime Dainty
2 tablespoons butter
3 leeks washed and chopped
2 sticks celery washed and chopped
2 rashers back bacon finely chopped
8oz red lentils
2 1/2 pints water
2 chicken stock cubes
salt and pepper
cream for swirling
(see measure conversions for more information)
- Add the celery, leeks and bacon.
- Cover and cook over a low heat for about 10 minutes.
- Add the lentils and the water.
- Add the stock cubes.
- Bring to the boil.
- Reduce heat.
- Cover and simmer for 30 minutes.
- Cool a little.
- Blend in blender.
- Reheat and serve.

How to make bacon and lentil soup:
A hearty, warming soup made from lentils and bacon. It is ideal as an appetiser in small portions or if you prefer serve it at lunch with plenty of hot, crusty bread.Ingredients

3 leeks washed and chopped

Method
