Starter - Avocado Salad

How to make avocado salad:
A quickly prepared, light salad that has a tangy and summery taste. The quantities can be adjusted according to your taste.


Avocado Salad
1 large avocado, peeled, stone removed, flesh sliced
2 sticks of celery, washed and finely chopped
2 Little Gem lettuces, washed and torn into small pieces
1 red eating apple, peeled, cored and chopped
4oz grapes, halved, pips removed

for the dressing:

6 tablespoons of vegetable oil
2 tablespoons of lemon juice
freshly ground black pepper
1/2 level teaspoon dry mustard
1/2 teaspoon caster sugar
fresh, finely chopped parsley

- Put all the dressing ingredients into a jug and mix well.
- Mix all the salad ingredients in a large bowl.
- Pour the dressing over the salad.
- Transfer to serving dish.
