Starter - Asparagus with Lemon

How to make asparagus with lemon:
Asparagus has a lovely flavour and the lemon adds a contrast to the taste. It is in season in June and is regarded by many as a delicacy.


as many Asparagus spears as are required
two parts olive oil to one part lemon juice
flavour with finely chopped parsley and season with salt and black pepper to taste.

- Cook the asparagus in salted boiling water in bundles for 12 - 20 minutes depending on the freshness of the asparagus.
- Drain when cooked.
- Beat the oil, lemon juice, parsley, and seasoning thoroughly.
- The mixture should thicken a little.
- Arrange the asparagus on a serving plate or individual plates, and spoon the sauce over to taste.
