1/2 cup butter
1/4 pint milk
1/4 pint evaporated milk
4 tablespoons ready to eat dried apricots, chopped
(see measure conversions for more information)
- Place sugar, butter, milk and evaporated milk in a heavy based pan.
- Heat gently, stirring until the sugar has dissolved.
- Bring to the boil without stirring and boil gently until the mixture registers 116oC/240oF (soft boil stage) on a sugar thermometer, stirring occasionally to prevent the milk scorching.
- Remove the pan from the heat.
- Add the chopped apricots and beat the mixture with a wooden spoon for about 10 minutes, or until it becomes thick and grainy.
- Pour mixture into the prepared tin and level the surface.
- Leave until almost set, and then mark into small squares using a sharp knife.
- Allow to cool completely, and then cut into squares and remove from the tin.
- Store in an airtight container.

How to make apricot fudge:
