1lb demerara sugar
1/2 oz chillies finely chopped.
1/2 oz salt
1/4 oz cayenne pepper
1/4 oz ground ginger
good pinch of ground cloves
1 tablespoon lemon juice
(see measure conversions for more information)
- Add the lemon juice and cook gently until soft.
- Put all the other ingredients into the pan and boil gently until the mixture thickens (about 1/2 hour).
- Stir occasionally.
- Allow to cool.
- Bottle.

How to make apricot chutney:
An unusual chutney recipe made with apricots and fresh chilli.
Ingredients
2lb apricots1lb demerara sugar
1/2 oz chillies finely chopped.
1/2 oz salt

Method
- Put the apricots into a heavy bottomed saucepan and cover them with water.- Add the lemon juice and cook gently until soft.
- Put all the other ingredients into the pan and boil gently until the mixture thickens (about 1/2 hour).
- Stir occasionally.
- Allow to cool.
- Bottle.
