How to make apricot bonbons:
A no-cook candy with desiccated coconut and glace fruit. Glace cherries can be used instead of the apricots if preferred.
N.B. Be careful serving raw egg to vulnerable (i.e. the young and old).


glace apricots to decorate
1 1/4 cups icing/confectioner's sugar
white of 1 egg
2 tablespoons desiccated coconut
1 teaspoon lemon juice
(see measure conversions for more information)


- Rub the sugar through a sieve.
- Mix with it the coconut and lemon juice.
- Make a paste by adding whipped white of an egg, and leave it for some hours to dry.
- Then make it into balls the size of small marbles, and cover one side of the ball with a piece of fruit.
- Roll in desiccated coconut and leave to dry.
