How to make apple sauce:
This sauce is the traditional accompaniment to roast pork. The slight acidity of the apples counter-balances the richness of the pork. There is a traditional affinity with pigs and orchards in Britain since pigs were very often put to fatten in the orchards where they could eat the windfall apples.
