1/2lb caster/superfine sugar
1oz butter
a little ground nutmeg
juice and grated rind of a lemon
(see measure conversions for more information)
- Put the mixture into a saucepan and heat for a few minutes.
- Beat the mixture until thick.
- Put dessertspoonfuls of the mixture onto a well-greased oven tray.
- Bake 130oC. for 15 - 20 minutes.
- Can be kept like biscuits in an airtight tin.

How to make apple lemon surprises:
These make a change from ordinary cakes and biscuits. You end up with a sort of "fruit leather" which was one of the earliest ways of preserving fruit. Also known as "Fruit Cheese".
Ingredients
1lb cooking apples peeled, cored and stewed1/2lb caster/superfine sugar
1oz butter
a little ground nutmeg
juice and grated rind of a lemon

Method
- Sieve the apples and add the sugar, butter, nutmeg and grated rind and juice of lemon.- Put the mixture into a saucepan and heat for a few minutes.
- Beat the mixture until thick.
- Put dessertspoonfuls of the mixture onto a well-greased oven tray.
- Bake 130oC. for 15 - 20 minutes.
- Can be kept like biscuits in an airtight tin.
