How to make apple cider cake:
A rich apple cake topped with cider flavoured icing.


6oz butter
6oz caster/superfine sugar
3 eggs
6oz self raising flour
1 1/2 level teaspoons baking powder
2 tablespoons sweet cider

for filling:

2 cooking apples, peeled and sliced
1 rounded teaspoon grated lemon rind
2oz caster/superfine sugar
5floz whipped cream

for topping:

8oz icing/confectioner's sugar sifted
2 tablespoons sweet cider

- Put all the cake ingredients into a bowl and beat until smooth and creamy.
- Divide the mixture between two 8 inch sandwich tins.
- Bake at 180 degrees C. for 25 minutes or until risen and golden.
- Turn out and cool on a wire rack.
- Put the apples in a pan with the sugar and lemon rind.
- Simmer gently until soft.
- Push through a sieve and allow to cool.
- When cold fold the whipped cream into the apple puree.
- Use the apple and cream mixture to sandwich the cakes together.
- Sift the icing sugar and mix with the cider until smooth.
- Ice the top of the cake with the icing.
