8oz onions peeled and finely chopped.
1 quart vinegar
2oz mustard seeds washed in a little vinegar and dried in a cool oven
4oz raisins chopped finely
1/2 lb sugar
1oz mustard
1oz ground ginger
1oz salt
2oz garlic
4 tamarinds (optional)
small pinch of cayenne
(see measure conversions for more information)
- Simmer until soft.
- Add the other ingredients to the apples and onions and simmer until thickened.
- Put into sterilized, warm jars.
- Allow to cool.
- Cover as for jam.

How to make apple chutney:
Always a favourite with cheese or cold meats. Make this Apple Chutney in the Autumn to add relish to your winter meals. Good with cold turkey.
Ingredients
12 large sour apples peeled, cored and finely chopped8oz onions peeled and finely chopped.
1 quart vinegar
2oz mustard seeds washed in a little vinegar and dried in a cool oven
4oz raisins chopped finely
1/2 lb sugar
1oz mustard
1oz ground ginger
1oz salt
2oz garlic

Method
- Put the apples and onions into a preserving pan with the vinegar.- Simmer until soft.
- Add the other ingredients to the apples and onions and simmer until thickened.
- Put into sterilized, warm jars.
- Allow to cool.
- Cover as for jam.
