Refreshing Apple Soup Recipe
A refreshing and unusual fruit soup that is simple to make. Perfect if you have a load of apples left over and don't want to make more wine or preserves. If you find that you like the soup, feel free to experiment with the ratio of white wine to apples. Some may prefer more wine and vice versa. Of course, as with most wine cooking, the quality of the white wine you use will have an impact on the dish. Try and find a balance between the cost and quality of the wine, becasue you don't want something really cheap that will spoil the soup but equally you don't want to waste a good wine in the soup either.

- 4 cooking apples
- 1 pint water
- 1/2 pint white wine
- sugar to taste
- Chop the apples but do not peel or core.
- Simmer in the water until tender then place in blender.
- Then puree.
- Add the white wine.
- Taste and stir in required amount of sugar while the apple puree is still warm to make the sugar dissolve completely.
- Garnish with lemon rings.
