Apple and Lentil Soup Recipe

A fruity, slightly spicy soup thickened with lentils.


  • 2 large cooking apples, peeled, cored and chopped
  • 1 cup of chopped celery
  • 2 large onions, peeled and chopped
  • 2 large carrots, peeled and chopped
  • 1 cup red lentils
  • 1-2 teaspoons curry powder
  • 2 teaspoons tomato paste
  • 7 1/2 cups water or bouillon
  • seasoning
(see measure conversions for more information on quantites)


  1. Put the chopped apples, celery, onions and carrots into a large saucepan.
  2. Wash and drain the lentils, then mix then with the vegetables.
  3. Add the curry powder and tomato paste and mix in well.
  4. Add the water or bouillon and season.
  5. Bring to boil, cover and simmer gently for 1-1 1/2 hours, until the lentils are soft.
  6. Puree the soup in a blender, or press through a coarse sieve.
  7. Return the soup to the rinsed-out saucepan and reheat.
  8. Serve when hot.

Prep Time: 20 minutes

Cook Time: 90 minutes

Yield: 4 portions

Your soup looks very deep and luscious. The kind that coats the spoon. I am personally glad you did not use green lentils, I prefer these ones better.

Very nice!
2 tsp medium curry powder produced perfect level of spice.
Needed extra 450ml of veg stock.
Would definitely make again ;)
