2 tablespoons cake crumbs
2 eggs
2 tablespoons sherry
caster/superfine sugar
shortcrust pastry
strawberry jelly
almond essence
(see measure conversions for more information)
- Line some well greased patty-tins with it.
- Spread 1 teaspoon of jelly on to the bottom of each.
- Separate the yolks from the eggs (retain the whites).
- Mix them with the almonds, crumbs, sherry and sugar (to taste).
- Put some of this mixture into each patty-tin on top of the jelly.
- Whip the egg-whites until stiff.
- Fold in some caster sugar and a few drops of almond essence.
- Pile some of it on top of each tartlet and bake in a moderate oven for about 30 minutes.
