How to make almond rounds:
Lovely almond flavoured biscuit rounds.


5oz plain flour
2 1/2oz butter
1oz sugar
1/4oz ground almonds
good pinch of baking powder
2oz caster/superfine sugar
2oz ground almonds
1 egg white
drop of almond essence
(see measure conversions for more information)


- Cream the butter and the sugar.
- Work in the flour and almonds using your hands.
- Roll out the dough and cut into 2 inch rounds.
- Mix the caster sugar, ground almonds and almond essence.
- Add sufficient beaten egg white to make a paste.
- Form into small balls and place several on top of each of the rounds.
- Bake in a moderate oven 325oF/160oC/gas mark 3 till a pale biscuit colour about 15 – 20 minutes.
