How to make almond cookies:
Crisp, melt-in-the-mouth cookies. If you prefer you could leave out the cherries and angelica and use these cookies as an accompaniment to a good quality vanilla ice cream.


1 1/4 cups ground almonds
1/2 cup superfine sugar
whites of 3 eggs
almond essence (a few drops to taste)

- Whip the egg whites until very stiff.
- Add the ground almonds, sugar and almond essence.
- Put the mixture into a piping bag with a rose nozzle.
- Press out into shapes onto a greased baking-sheet.
- Decorate with cherries and angelica (if preferred).
- Bake in a moderate oven for 10-15 minutes.
