2 cups ground almonds
1 1/2 cups icing/confectioner's sugar
1/2 teaspoon ground cinnamon
4 tablespoons orange flower water
for the glaze:
4 tablespoons icing/confectioner's sugar
2 tablespoons lemon juice
few drops natural red food colouring
(see measure conversions for more information)
- Place the chopped almonds, ground almonds, icing sugar and cinnamon in a bowl and stir.
- Add the orange flower water and knead until well mixed.
- Cover a wire rack with non-stick baking paper.
- Roll the mixture into small balls and place on the prepared rack.
- To make the glaze, place the icing sugar in a small pan with the lemon juice and 3 tablespoons water.
- Heat gently, stirring, until the mixture comes to the boil, then simmers for 2 minutes, stirring.
- Remove the pan from the heat and stir in a few drops of food colouring.
- Using 2 forks, dip each almond ball in the glaze to coat all over, then place on the wire rack.
- Leave the almond balls to dry.
