1 tablespoon mixed spice
1 tablespoon ground ginger
1 teaspoon bicarbonate of soda
3 1/2 cups oatmeal
8 tablespoons black treacle
1 cup unsalted butter
6 tablespoons brown sugar
6 fluid oz milk
2 medium organic eggs
(see measure conversions for more information)
- Add the oatmeal.
- Put the treacle, butter, sugar and milk into a small saucepan and heat very gently until all the ingredients are mixed together and the butter has melted.
- Allow this to cool and stir in the flour mixture.
- Add the eggs, beating until smooth.
- Turn into a well greased tin about 11 x 9 x 2 inches and bake at 180 degrees centigrade (see temperature conversions) for about 50 minutes.
- The cake should be firm to the touch.
- Remove from tin and cool on a wire rack.
