How to make suck cream:
A rustic Cornish dessert based on cream and wine. No doubt a fore runner of more elegant desserts.


1 pint cream
2-3 tablespoons white wine
lemon peel
yolk of one egg, well beaten
(see measure conversions for more information)


- Boil the cream.
- Add the beaten egg, the wine, sugar and lemon peel.
- Reduce heat and keep stirring until the mixture is thick.
- Leave until cold.
- Serve in glasses with fingers of dry toast.
