2oz root ginger
1oz fresh yeast
(see measure conversions for more information)
- Let this stand for 5 days.
- Strain.
- Bruise the ginger and put it in a muslin bag.
- Boil the honey water with the ginger in the muslin bag for 2-3 hours.
- Skim off any scum.
- Remove from the heat and when almost cold add the yeast.
- Put into a demijohn and bottle when the yeast has stopped working.

How to make Metheglin:

- Put honey into a saucepan with enough cold water to cover it.- Let this stand for 5 days.
- Strain.
- Bruise the ginger and put it in a muslin bag.
- Boil the honey water with the ginger in the muslin bag for 2-3 hours.
- Skim off any scum.
- Remove from the heat and when almost cold add the yeast.
- Put into a demijohn and bottle when the yeast has stopped working.
