Cornish Recipes > Fuggan

How to make Fuggan:
Very similar to Figgie Hobbin but slightly less rich due to the lack of suet. This is basically a sweetened pastry.

2 cups plain flour
2 tablespoons lard
pinch of salt
handful of raisins
(see measure conversions for more information)

- Rub the lard into the flour.
- Add the salt and the raisins.
- Mix to a stiff dough with a little cold water.
- Roll into an oval shape and mark a criss-cross on it with a knife.
- Bake for half an hour in a moderate oven.
