1 tablespoon salt
2 tablespoons pepper
2 tablespoons finely chopped thyme

- Make into sausages either by putting into skins or by shaping with well floured hands.

How to make Cornish sausages:
Thyme flavored homemade sausages. The family pig was a very common feature of everyday Cornish life up until about sixty years ago. Full use would have been made of every part of the animal and home sausage making was not unusual.
Ingredients
8 cups boiled ham or lean pork4 cups bread crumbs
1 tablespoon salt
2 tablespoons pepper
2 tablespoons finely chopped thyme

Method
- Mince the ham or pork and mix well with the breadcrumbs and salt, pepper and thyme.- Make into sausages either by putting into skins or by shaping with well floured hands.
- Fry or bake.
