How to make Cornish roast mackerel:
A really lovely way of cooking mackerel. Mackerel can tend to be a little fatty but by baking it on a rack the excess oil can drip off the fish leaving it tasty and crisp.


several large fresh mackerel, cleaned and gutted
very finely chopped parsley

- Put some parsley into the body cavity of the fish.
- Place mackerel on a rack in a pan.
- Sprinkle with salt and pepper.
- Roast in a hot oven (see temperature conversions) until cooked and crispy.
