How to make sweet potato cake:
A really good way of using up potatoes.


4 cups plain flour
4 medium sized cold boiled potatoes
1 cup grated suet
2 tablespoons sugar
1 tablespoon candied peel
pinch salt
4 tablespoons currants
milk or buttermilk
(see measure conversions for more information)


- Mix all the ingredients together with enough milk or buttermilk to form a stiff dough.
- Roll into an oblong and place on a greased baking tray.
- Mark lightly into squares and bake in a hot oven until golden brown.
