2 bay leaves chopped
6 cloves
1 blade of mace
sprig thyme
1 onion, peeled and chopped
10 peppercorns
salt
vinegar
finely chopped parsley
(see measure conversions for more information)
- Put the mackerel into an ovenproof dish.
- Sprinkle the onion and parsley over the fish.
- Add the other ingredients, except the vinegar.
- Pour over enough vinegar to cover the fish.
- Bake in a moderate oven (see temperature conversions) for 40-50 minutes.
- When cooked, remove the fish and put on a clean plate.
- Strain some of the vinegar over the fish.
- Serve cold.

How to make Cornish marinated mackerel:
This dish is very similar to soused herrings. The long cooking in vinegar and spices in the oven is an extremely good way to deal with an oily fish like mackerel and also has the effect of softening the bones.
Ingredients
